Cherry Tomato And Mozzarella Salad Recipe

Ingredients
  •  About 2 tbsps extra-virgin olive oil
  •  Coarse sea salt
  • 1/2 c loosely packed fresh basil leaves, rinsed
  • 8 oz small balls fresh mozzarella cheese (often labeled bocconcini), drained
  • 4 c (1 1/4 lb.) Sweet 100 or Sungold cherry tomatoes (or a mixture), rinsed & stemmed

Directions
  • Step #1 Cut cherry tomatoes in half with a sharp knife.
  • Step #2 Cut bocconcini in half.
  • Step #3 Tear basil leaves into small pieces.
  • Step #4 In a bowl, carefully mix cherry tomatoes, mozzarella, & basil.
  • Step #5 Drizzle with 2 tbsps olive oil & sprinkle lightly with salt; add more oil & salt to taste.
