Lima Bean-and-fresh Herb Pâté Recipe

Ingredients
  • 1 (15-oz) can lima beans, rinsed & drained
  • 3/4 tsp salt
  • 1/4 tsp pepper
  • 2 tbsps sliced fresh parsley
  • 2 garlic cloves
  • 1 c ricotta cheese
  • 2 tbsps sliced fresh chives
  • 2 to 3 tsps sliced fresh dill
  • 3 tbsps fresh lemon juice
  • 2 tbsps extra virgin olive oil

Directions
  • Step #1 Process first 7 ingredients in a food processor/blender until smooth, stopping to scrape down sides.
  • Step #2 Add chives, parsley, & dill; process until mixd.
  • Step #3 Spoon mixture into a lightly greased 2-c bowl lined with plastic wrap.
  • Step #4 Cover up & chill 8 hrs.
  • Step #5 Unmold pâté, discarding plastic wrap; place on a serving dish.
