Grilled Okra And Tomato Skewers Recipe

Ingredients
  • 1/8 tsp sugar
  • 2 garlic cloves, minced
  • 1 tsp freshly ground black pepper
  • 24 okra pods (about 3/4 lb), trimmed
  • 2 small onions, each cut into 8 wedges
  • 1 tsp water
  •  Cooking spray
  • 1 tsp kosher salt
  • 4 tsps olive oil
  • 16 cherry tomatoes (about 1/2 lb)
  • 1/2 tsp ground red pepper

Directions
  • Step #1 Prepare grill.
  • Step #2 Divide each onion wedge into 2 equal pieces.
  • Step #3 Thread 3 okra pods, 2 cherry tomatoes, & 2 onion pieces alternately onto each of 8 (12-inch) skewers.
  • Step #4 Combine olive oil, & the remaining ingredients except for cooking spray in a small bowl, kosher salt, stirring with a whisk.
  • Step #5 Brush olive oil mixture over the skewers.
  • Step #6 Place the skewers on a grill rack coated with cooking spray, & grill skewers for 3 mins on each side or until tender.
