Saffron Linguine With Herb Oil And Shaved Manchego Cheese Recipe

Ingredients
  • 1/4 lb Manchego or young Pecorino cheese, shaved with a vegetable peeler
  • 1/2 c sliced almonds, toasted until golden
  •  Freshly ground pepper
  •  Pinch of saffron threads
  • 1/4 c sliced mint
  • 1/4 c extra-virgin olive oil
  • 1 large garlic clove, minced
  • 1/2 tsp sliced thyme
  • 1/2 lb linguine
  • 1 tsp fresh lemon juice
  • 2 tbsps unsalted butter
  • 1 tsp sliced tarragon
  • 1/2 c sliced flat-leaf parsley

Directions
  • Step #1 In a mixer, tarragon, puree the parsley with the mint, olive oil, thyme & lemon juice.
  • Step #2 Scrape the oil into a bowl.
  • Step #3 Melt the butter In a large-ish skillet.
  • Step #4 Add the garlic & saffron & cook over low heat/flame until fragrant, about 1 min.
  • Step #5 Cook the linguine in boiling salted water until al dente.
  • Step #6 Set the skillet with the garlic over moderately high heat & add 1/2 c of the pasta cooking water.
  • Step #7 Drain the pasta, add it to the skillet & toss well.
  • Step #8 Transfer the pasta to warmed shallow bowls.
  • Step #9 Top with the cheese shavings, toasted almonds & herb oil.
  • Step #10 Sprinkle top the linguine with pepper & serve at once.
