Roasted Red Peppers With Garlic And Olive Oil Recipe

Ingredients
  • 8 red bell peppers
  • 1 tsp kosher or sea salt
  • 4 tbsps extra-virgin olive oil
  • 2 cloves garlic, minced

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Put peppers In a large-ish baking pan & bake this until soft when pressed, 40 to 50 mins.
  • Step #3 Let cool 10 to 20 mins to loosen skin.
  • Step #4 Meanwhile, with a mortar & pestle, mash garlic with salt into a paste (or mash garlic with salt with the flat side of a chef's knife, then put into a small bowl).
  • Step #5 Stir in olive oil to mix.
  • Step #6 Peel, stem, & seed peppers & cut lengthwise into 3/4-inch-wide strips.
  • Step #7 Arrange peppers on a platter & drizzle with garlic oil, scraping it out of the mortar or bowl to get all the garlic.
  • Step #8 Serve warm or at about room temp.
