Chili Jack Chicken Recipe

Ingredients
  • 1/2 c shredded Monterey Jack cheese
  • 1 tbsp butter or margarine
  • Hot cooked rice
  • 2 skinless, boneless chicken breast halves
  • 1 tsp prepared mustard
  • 1 garlic clove, minced
  • 1/2 c whipping cream
  • 1/2 c chicken broth
  • salt to taste
  • 1 (4 oz) can sliced green chilies
  • 1 tbsp vegetable oil

Directions
  • Step #1 In a large skillet, brown chicken in butter an oil for 10 mins; drain.
  • Step #2 Add the broth, chilies, mustard, garlic & salt.
  • Step #3 Simmer, uncovered, for 10 mins or until chicken juices run clear.
  • Step #4 Stir in the cream; simmer until thickened.
  • Step #5 Sprinkle top with cheese.
  • Step #6 Cover & cook this until the cheese is melted.
  • Step #7 Serve over rice.
