Garnishes: sliced green onions, walnut halves, baby leaf lettuce
Directions
Step #1 Bring lentils & chicken broth to a boil In a large-ish saucepan over med-heat/flame; cover, & let simmer, stirring every once in awhile, reduce heat, 30 mins or until lentils are tender.
Step #2 Drain lentils, if necessary.
Step #3 Sauté sliced onion in hot vegetable oil In a large-ish skillet over medium-high heat for 5 mins or until onion is tender.
Step #4 Process one-third of lentils, & one-third of walnuts in a food processor/blender, in 3 batches, until mixture is smooth, one-third of onion, stopping to scrape down sides.
Step #5 Stir together lentil mixture, salt, & pepper.
Step #6 Line a 3-c mold with plastic wrap.
Step #7 Spoon lentil mixture into mold.
Step #8 Cover up & chill 8 hrs.
Step #9 Unmold onto a serving plate.
Step #10 Garnish, if desired.
Step #11 Serve with celery sticks & crackers.
Step #12 *Note: Beef or vegetable broth may be substituted for chicken broth.
