Caramelized Onion Relish Recipe

Ingredients
  • 1 tbsp fresh rosemary
  • 3 tbsps fresh orange juice
  • 2 tbsps red wine vinegar
  • 1 tbsp orange zest
  • 2 tbsps olive oil
  • 1 large red onion, thinly sliced (about 1 1/2 c)
  • 2 tbsps sugar

Directions
  • Step #1 Heat olive oil In a large-ish skillet over med-heat/flame.
  • Step #2 Add onion, stirring every once in awhile, & cook, for 10 mins or until onion is soft & translucent.
  • Step #3 Add remaining ingredients, & cook, stirring every once in awhile, for 20 to 25 mins more.
  • Step #4 (Onion will turn a red, translucent, almost candied color, & most of the liquid will evaporate.
  • Step #5 ) Serve warm, or store this in an airtight container in the refrigerator up to a week.
