Basil-cheese Roulade Recipe

Ingredients
  • 1 garlic clove, sliced
  • 1 c (4 oz) freshly grated Parmesan cheese
  •  Assorted crackers
  • 1 (8-oz) package cream cheese, softened
  • 1/4 c finely sliced walnuts
  • 3 tbsps olive oil
  • 4 oz Roquefort cheese, softened
  •  Garnishes: fresh flat-leaf parsley, fresh basil, edible flowers
  • 1/4 c fresh basil leaves
  • 1/4 c finely sliced sun-dried tomatoes
  • 1 c fresh baby spinach leaves
  • 3/4 c fresh Italian parsley

Directions
  • Step #1 Beat cream cheese & Roquefort cheese at medium speed with an electric mixer until smooth.
  • Step #2 Line a baking sheet with parchment paper.
  • Step #3 Spread cheese mixture into an 11- x 8-inch rectangle on parchment paper.
  • Step #4 Cover up & chill 1 hr.
  • Step #5 Process spinach & next 4 ingredients in a food processor/blender until smooth.
  • Step #6 Stir in freshly grated Parmesan cheese, sliced walnuts, & sliced sun-dried tomatoes.
  • Step #7 Spread spinach mixture evenly over cheese rectangle.
  • Step #8 Using the parchment paper as a guide, roll up, jelly-roll fashion.
  • Step #9 Wrap in parchment paper, sealing at ends, & chill at least 2 hrs.
  • Step #10 Remove paper, & garnish, if desired.
  • Step #11 Serve with assorted crackers.
