White Bean Bruschetta Recipe

Ingredients
  • 1/4 c sliced fresh flat-leaf parsley
  • 1 1/2 tbsps fresh lemon juice
  • 1 large garlic clove
  • 3 tbsps extravirgin olive oil
  • 1/2 tsp freshly ground black pepper
  • 1/2 tsp salt
  • 1 (10-oz) French bread baguette, cut into 24 (1/2-inch-thick) slices
  • 1 (19-oz) can cannellini beans or other white beans, rinsed & drained
  • 2 tsps water

Directions
  • Step #1 Preheat oven to 350º.
  • Step #2 Place parsley, garlic, pepper, juice, salt, & beans in a food processor/blender; process until smooth.
  • Step #3 With processor on, slowly add oil through food chute.
  • Step #4 Add 2 tsps water, 1 tsp at a time; process until creamy.
  • Step #5 Place bread on a baking sheet.
  • Step #6 Bake at 350º for 5 mins on each side or until lightly browned.
  • Step #7 Serve with white bean spread.
