Calamari Cocktail Recipe

Ingredients
  • 1 tbsp fresh oregano or 1 tsp dried
  • 2 tbsps fresh lemon juice
  • 1/4 tsp freshly ground black pepper
  • 2 tbsps sliced red bell pepper
  • 2 tbsps sliced green bell pepper
  • 2 tbsps capers, drained
  • 1/4 c extra-virgin olive oil
  • 1/2 tsp salt
  • 1 (2.5-lb) package frozen, cleaned calamari (tubes & tentacles), thawed
  • 10 green olives with pimientos, sliced
  • 1/3 c white wine vinegar

Directions
  • Step #1 Cut calamari tubes into 1/4-inch-thick rings.
  • Step #2 Cut tentacles in half, if large.
  • Step #3 Fill a 2-quart saucepan with water; bring to a boil over medium-high heat.
  • Step #4 Add calamari & lemon juice to boiling water; cook 2 mins.
  • Step #5 Drain & rinse with cold water.
  • Step #6 Combine vinegar & next 8 ingredients In a large-ish bowl; add calamari, & toss to coat.
  • Step #7 Cover up & chill at least 4 hrs.
