Baked Buffalo Chicken Wings Recipe

Ingredients
  • 2 scallions including green tops, sliced
  • 1/4 tsp fresh-ground black pepper
  • 1 3/4 tsps salt
  • 1 1/2 tsps cayenne
  • 3 tbsps cooking oil
  • 1 tbsp Tabasco sauce
  • 8 ribs celery, cut into sticks
  • 4 lbs chicken wings
  • 1/4 c ketchup
  • 1/4 lb blue cheese, crumbled (about 1 c)
  • 4 cloves garlic, sliced
  • 1/3 c sour cream
  • 5 tsps vinegar
  • 2/3 c mayonnaise

Directions
  • Step #1 Heat the oven to 425°.
  • Step #2 In a large bowl, mix the wings, oil, garlic, 1 1/2 tsps of the salt, & the cayenne.
  • Step #3 Arrange the wings in a single layer on two large baking sheets.
  • Step #4 Bake until just done, about 25 mins.
  • Step #5 Meanwhile, 1 tsp of the vinegar, sour cream, mix the mayonnaise, in a medium glass or stainless-steel bowl, blue cheese, the remaining 1/4 tsp salt, scallions, & the black pepper.
  • Step #6 In a large bowl, mix the ketchup, the remaining 4 tsps vinegar, & the Tabasco sauce.
  • Step #7 Add the wings & toss to coat.
  • Step #8 Serve the wings with the celery sticks & blue-cheese dressing alongside.
  • Step #9 Menu Suggestions: Pair these wings with more finger food.
  • Step #10 Corn on the cob would go nicely.
  • Step #11 Roasted potato wedges are a good alternative & can be cooked alongside the wings.
