Black Bean Cakes With Chipotle Cream Recipe

Ingredients
  • 3/4 c fine, dry breadcrumbs, divided
  • 1/2 c sliced green onions
  • 1/2 c frozen corn kernels, thawed
  •  Chipotle Cream
  • 1 red bell pepper, sliced
  • 2 (15-oz) cans black beans, rinsed & drained
  • 1/4 tsp salt
  • 6 tsps olive oil, divided
  • 1/4 tsp pepper
  • 2 tbsps light mayonnaise
  • 1 1/2 tsps ground cumin
  • 1/2 tsp dried crushed red pepper
  • 4 garlic cloves, minced
  • 3 tbsps sliced fresh cilantro
  • 1 large egg, beaten

Directions
  • Step #1 Sauté first 4 ingredients in 2 tsps hot oil In a large-ish nonstick skillet over medium-high heat 5 mins or until tender.
  • Step #2 Remove from heat; cool slightly.
  • Step #3 Mash 1 1/2 c black beans In a large-ish bowl.
  • Step #4 Stir in remaining black beans, cumin, red bell pepper mixture, & next 3 ingredients.
  • Step #5 Add 1/2 c breadcrumbs, cilantro, & egg, mayonnaise, stirring until well mixed.
  • Step #6 Shape black bean mixture into 8 (1/2-inch-thick) patties.
  • Step #7 Place patties on a wax paper-lined baking sheet.
  • Step #8 Cover up & chill 1 hr.
  • Step #9 Lightly dredge chilled patties in remaining 1/4 c breadcrumbs.
  • Step #10 Cook 4 patties in 2 tsps hot oil In a large-ish nonstick skillet over med-heat/flame 5 mins on each side or until brown.
  • Step #11 Remove from skillet; keep warm.
  • Step #12 Repeat procedure with remaining 4 patties & 2 tsps oil.
  • Step #13 Serve with Chipotle Cream.
