Crab And Shiitake Potstickers With Citrus Dipping Sauce Recipe

Ingredients
  • 36 potsticker wrappers
  • 1 c napa cabbage, finely shredded
  • 1 1/2 tsps grated fresh ginger
  • 1/2 tsp salt
  • 1/3 c shredded carrot
  •  Citrus Dipping Sauce
  • 2 tbsps sliced fresh cilantro
  • 1 1/2 c sliced fresh shiitake or button mushrooms
  • 2 tbsps butter
  •  Vegetable oil
  • 12 oz fresh lump crabmeat, drained
  • 1 tbsp minced fresh garlic
  • 1/3 c sliced green onion
  • 1 tsp dark sesame oil
  • 1 large egg white, lightly beaten

Directions
  • Step #1 Prepare Citrus Dipping Sauce.
  • Step #2 Melt butter In a large-ish nonstick skillet over medium-high heat.
  • Step #3 Add mushrooms; cook 5 mins or until tender.
  • Step #4 Remove from heat.
  • Step #5 Combine mushrooms, cabbage, & next 7 ingredients; stir well.
  • Step #6 Add egg white & crabmeat, stirring carefully to mix.
  • Step #7 Brush water around edges of each potsticker wrapper; place 1 tbsp crab mixture in center of each wrapper.
  • Step #8 Fold wrapper over, forming a semi-circle.
  • Step #9 Fold overlapping pleats into dough on one side, pressing to seal.
  • Step #10 (The pleats enable the potstickers to stand upright.
  • Step #11 ) Place on a baking sheet; cover & chill 2 hrs.
  • Step #12 Heat 2 tsps oil In a large-ish nonstick skillet over medium-high heat.
  • Step #13 Carefully add half of potstickers, & cook 2 to 3 mins until browned on bottom.
  • Step #14 Add 1/2 c water to skillet, & cover quickly.
  • Step #15 (Skillet will hiss & steam rapidly.
  • Step #16 ) Steam 3 to 4 mins until thoroughly cooked.
  • Step #17 Drain skillet, & repeat steam-fry procedure with remaining potstickers.
  • Step #18 Serve as soon as possible with Citrus Dipping Sauce.
