Blackened Shrimp With Pomegranate-orange Salsa Recipe

Ingredients
  • 1/4 tsp salt
  • 1/2 tsp salt
  • 1/2 tsp ground allspice
  • 3/4 tsp ground red pepper
  • 2 tbsps sliced fresh cilantro
  • 1 tsp dried oregano
  • 3/4 tsp dried thyme
  • 36 large shrimp, peeled & deveined (about 1 1/2 lbs)
  • 1 c finely sliced orange sections (about 2 oranges)
  • 5 tsps olive oil, divided
  • 1/3 c sliced green onions
  •  Salsa:
  • 2 c pomegranate seeds (about 4 pomegranates)
  • 1 tbsp paprika
  • 2 tbsps minced seeded jalapeño pepper
  • 1 tsp garlic powder
  • 2 tsps ground cumin
  •  Shrimp:

Directions
  • Step #1 To prepare salsa, mix the first 6 ingredients.
  • Step #2 To prepare shrimp, mix paprika & the next 7 ingredients (through allspice) In a large-ish zip-top plastic bag.
  • Step #3 Add shrimp to bag; seal & shake well to coat.
  • Step #4 Remove shrimp from bag.
  • Step #5 Heat 2 1/2 tsps oil In a large-ish nonstick skillet over medium-high heat.
  • Step #6 Add half of shrimp mixture; cook 2 mins on each side or until done.
  • Step #7 Remove from pan.
  • Step #8 Repeat procedure with remaining 2 1/2 tsps oil & remaining shrimp mixture.
  • Step #9 Serve warm with salsa.
