Roasted Oysters With Prosciutto And Spinach Recipe

Ingredients
  • 18 shucked oysters
  • 1 (6-oz) package fresh baby spinach
  • 2 tbsps pine nuts, toasted
  • 1/4 tsp freshly ground black pepper
  • 1 oz finely sliced prosciutto

Directions
  • Step #1 Preheat oven to 450°.
  • Step #2 Heat a large nonstick skillet over med-heat/flame.
  • Step #3 Add spinach to pan; cook 3 mins or until spinach is wilted, stirring every once in awhile.
  • Step #4 Add prosciutto to pan; sauté 1 min or until crisp.
  • Step #5 Stir in pepper.
  • Step #6 Remove from heat; cool.
  • Step #7 Arrange oysters in a single layer in a broiler pan; spoon about 1 tbsp spinach mixture onto each oyster.
  • Step #8 Sprinkle top oysters evenly with pine nuts.
  • Step #9 Bake at 450° for 5 mins or until oysters are opaque.
  • Step #10 Serve as soon as possible.
