Ingredients
18 shucked oysters
1 (6-oz) package fresh baby spinach
2 tbsps pine nuts, toasted
1/4 tsp freshly ground black pepper
1 oz finely sliced prosciutto
Directions
Step #1 Preheat oven to 450°.
Step #2 Heat a large nonstick skillet over med-heat/flame.
Step #3 Add spinach to pan; cook 3 mins or until spinach is wilted, stirring every once in awhile.
Step #4 Add prosciutto to pan; sauté 1 min or until crisp.
Step #5 Stir in pepper.
Step #6 Remove from heat; cool.
Step #7 Arrange oysters in a single layer in a broiler pan; spoon about 1 tbsp spinach mixture onto each oyster.
Step #8 Sprinkle top oysters evenly with pine nuts.
Step #9 Bake at 450° for 5 mins or until oysters are opaque.
Step #10 Serve as soon as possible.
