Bacon Rings With Avocado Recipe

Ingredients
  • 1 small avocado, sliced 1/4 inch thick lengthwise, slices halved crosswise
  • 2 tsps hot sauce
  •  Salt
  • 1 c alfalfa sprouts
  • 2 tbsps mayonnaise
  • 16 thin slices of lean bacon (about 3/4 lb)
  • 4 large carrots (1 1/2 inches in diameter)

Directions
  • Step #1 Preheat the oven to 425°.
  • Step #2 Lay 4 slices of the bacon side by side on a work surface.
  • Step #3 Place a carrot at 1 end & roll up the carrot in the bacon slices.
  • Step #4 Transfer the carrot to a rimmed baking sheet.
  • Step #5 Repeat with the remaining bacon & carrots.
  • Step #6 Bake for about 45 mins, or until the bacon is crisp.
  • Step #7 Let cool slightly, then carefully loosen each bacon ring & slide it off the carrot, keeping the ring intact.
  • Step #8 Stand the rings up & let cool.
  • Step #9 In a small bowl, mix the mayonnaise with the hot sauce & season this with salt.
  • Step #10 When a carrot is cool enough to handle, cut it into 3-inch-long matchsticks.
  • Step #11 Save the other carrots for another use.
  • Step #12 To assemble a ring, carefully press 3 carrot sticks together with 2 avocado slices.
  • Step #13 Spread a thin layer of the mayonnaise mixture all around them & then roll in alfalfa sprouts.
  • Step #14 Gently press this filling into a bacon ring, pushing it in only halfway or just far enough to hold together.
  • Step #15 Repeat to form the remaining bacon rings.
  • Step #16 Transfer to a platter & serve at about room temp.
  • Step #17 Make Ahead: The bacon rings can be put in the fridged overnight.
  • Step #18 Reheat in a 350° oven for 2 mins, or until sizzling.
