Ingredients
Freshly ground pepper
2 lbs medium shrimp, shelled & deveined, shells reserved
1/4 tsp sweet paprika
3 c heavy cream
Salt
5 tbsps unsalted butter, 4 tbsps melted
4 c small oyster crackers
1/4 c dry sherry
Hot sauce
1 tsp Worcestershire sauce
2 tsps fresh lemon juice
6 medium scallions, white & tender green parts, minced
Directions
Step #1 Butter a 3 1/2-quart shallow glass baking dish.
Step #2 Arrange the shrimp in the baking dish in a single layer.
Step #3 Cover up with plastic & put in the fridge.
Step #4 In a medium saucepan, mix the cream & sherry with the shrimp shells.
Step #5 Add a pinch of salt & bring to a boil.
Step #6 Simmer over moderately low heat for 25 mins; strain through a coarse sieve set over a large glass measuring c; you should have about 2 1/2 c.
Step #7 Preheat the oven to 400°.
Step #8 Melt the 1 tbsp of solid butter in a medium skillet.
Step #9 Add the scallions & cook over moderate heat, stirring, for 3 mins.
Step #10 Add the shrimp cream & let simmer until reduced to 2 c, about 5 mins.
Step #11 Pour the cream into a bowl & stir in the the lemon juice & Worcestershire sauce.
Step #12 Spice up with salt, pepper & hot sauce; let cool until tepid.
Step #13 Spice up the shrimp with salt & pepper & evenly pour the cream over them.
Step #14 Put the oyster crackers in a sturdy resealable plastic bag, press the air out & seal to close.
Step #15 Lay the bag on a work surface and, using a rolling pin or a heavy pan, crush the crackers until coarse crumbs form.
Step #16 Transfer to a medium bowl.
Step #17 Add the 4 tbsps of melted butter & the paprika & stir this to coat.
Step #18 Scatter the cracker crumbs over the shrimp & pat to smooth.
Step #19 Bake the casserole in the center of the oven for 25 mins, or until bubbling around the edge & the shrimp are just cooked through.
Step #20 Remove from the oven.
Step #21 Preheat the broiler.
Step #22 Broil the casserole for 30 seconds, rotating as necessary, until the topping is evenly browned.
Step #23 Let stand at about room temp for 5 to 10 mins before serving.
Step #24 Make Ahead: The casserole can be prepared through Step 4 & put in the fridged overnight.
Step #25 Let stand at about room temp for 20 mins before proceeding.
Step #26 Wine Recommendation: A white with bright fruity flavors will stand up to the sherry & spices & complement the creaminess here.
Step #27 Look for the 2002 Santa Julia Torrontes from Argentina or the 2002 Marqués de Cáceres Rioja Blanco from Spain.
