Roasted Pepper And Rosemary Relish Recipe

Ingredients
  • 2 tsps red wine vinegar
  • 3 orange, red, or yellow bell peppers
  • 1 tsp extra-virgin olive oil
  • 1/4 tsp salt
  • 1 tsp sliced fresh rosemary
  • 1/2 tsp freshly ground black pepper

Directions
  • Step #1 Preheat broiler.
  • Step #2 Cut bell peppers in half lengthwise; discard seeds & membranes.
  • Step #3 Place pepper halves, skin sides up, on a foil wrap-lined baking sheet; flatten with hand.
  • Step #4 Broil 15 mins or until blackened.
  • Step #5 Place in a zip-top plastic bag; seal.
  • Step #6 Let stand 20 mins.
  • Step #7 Peel & cut into 1-inch pieces.
  • Step #8 Combine bell pepper & remaining ingredients in a small bowl; toss well.
  • Step #9 Cover up & chill 30 mins.
