Rolled Vegetable Sandwiches Recipe

Ingredients
  • 1 (11-oz) can whole kernel corn, drained
  • 1/4 lb fresh spinach, rinsed & drained
  • 8 (6-inch) flour tortillas
  • 1 (8-oz) package cream cheese, softened
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 cucumber, cut into thin strips
  • 3 carrots, scraped & cut into thin strips

Directions
  • Step #1 Spread tortillas with cream cheese; top this with spinach & next 3 ingredients.
  • Step #2 Sprinkle top with salt & pepper; fold bottom one-third of tortilla over filling, & roll up jellyroll fashion.
  • Step #3 Wrap sandwich in heavy-duty aluminum foil wrap; cover & chill in the fridge.
