Gingered Shrimp With Belgian Endive Recipe

Ingredients
  • 1 lb shelled cooked tiny shrimp, rinsed & drained
  • 1/4 c sliced pickled ginger
  • 1/4 c seasoned rice vinegar
  • 1 tbsp sliced green onion
  •  Coarse-ground pepper
  • 1 lb Belgian endive
  • 3/4 tsp wasabi paste or prepared horseradish

Directions
  • Step #1 In a bowl, pickled ginger, mix shrimp with wasabi paste, & rice vinegar.
  • Step #2 Sprinkle top with green onion.
  • Step #3 Place bowl on a tray.
  • Step #4 Rinse Belgian endive, trim off root ends, & separate leaves; arrange on tray & sprinkle with coarse-ground pepper.
  • Step #5 Spoon shrimp onto leaves to eat.
