  • Step #1 In a bowl, beat 1 package (8 oz.
  • Step #2 ) cream cheese to mix with 2 tbsps low-fat milk, 2 tsps anchovy paste, & 1 tsp paprika.
  • Step #3 Grate 1 tbsp onion & rub through a fine strainer into cheese mixture.
  • Step #4 Stir to mix.
  • Step #5 Put cheese mixture in a pastry bag with a star tip.
  • Step #6 Cut 1/4 lb thin-sliced firm-textured, rye, dense pumpernickel, or other dark bread into 48 equal pieces.
  • Step #7 Arrange on a platter.
  • Step #8 Twist bag top tightly down to filling, fold top down against bag, & grasp bag in one hand to hold top in place.
  • Step #9 Squeeze to press about 1 tsp of the cheese mixture onto each square of bread, holding bread with the other hand.
  • Step #10 Release pressure on bag slightly & lift straight up to detach bag from cheese.
  • Step #11 Sprinkle top appetizers lightly with caraway seed (about 1 tsp total), dot each with a drained caper, & sprinkle with sliced fresh chives.
  • Step #12 Nutritional analysis per piece.
