Chutney-glazed Cheese Pâtè Recipe

Ingredients
  • 1 (8-oz) block sharp Cheddar cheese, shredded
  • 3 tbsps dry sherry
  • 1 (9-oz) jar mango chutney
  • 1/2 tsp curry powder
  • 3 green onions, sliced
  • 1 (8-oz) package cream cheese, softened
  •  Garnishes: cucumber peel, cranberries
  • 1/4 tsp salt

Directions
  • Step #1 Stir together cheeses & next 3 ingredients In a large-ish bowl until mixed.
  • Step #2 Spread mixture evenly into a 4-c shallow serving dish.
  • Step #3 Cover up & chill 8 hrs.
  • Step #4 Spread chutney evenly over top of pâtè; sprinkle with green onions.
  • Step #5 Garnish, if desired.
  • Step #6 Chutney-and-Blue Cheese Pâtè : Substitute 1 (3-oz) package cream cheese & 1 (4-oz) package blue cheese for sharp Cheddar cheese.
  • Step #7 Proceed with recipe as directed, substituting cranberry chutney for mango chutney, if desired.
  • Step #8 Leftovers are great on roast beef sandwiches or burgers.
