Crab Cakes Recipe

Ingredients
  • 1 tbsp vegetable oil, divided
  • 1/4 tsp hot sauce
  • 1/3 c sliced fresh parsley
  • 1 large egg white, lightly beaten
  • 1/3 c sliced bottled roasted red bell peppers
  • 1 tbsp fresh lime juice
  • 1 tbsp water
  • 1 lb lump crabmeat, shell pieces removed
  • 1/4 tsp salt
  • 1/2 c crushed saltine crackers (12 crackers)
  • 2 tbsps plain low-fat yogurt

Directions
  • Step #1 Combine all ingredients except oil In a large-ish bowl.
  • Step #2 Divide crab mixture into 6 equal portions, shaping each into a 1-inch-thick patty.
  • Step #3 Heat 1 1/2 tsps oil In a large-ish nonstick skillet over medium-high heat.
  • Step #4 Add 4 patties; cook 4 mins.
  • Step #5 Carefully turn patties over; cook 3 mins or until golden.
  • Step #6 Repeat procedure with 1 1/2 tsps oil & remaining patties.
