1 1/3 to 1 3/4 c Yogurt Cheese (3/4 to 1 lb.; see notes)
1/2 to 3/4 c filling:
Thin baguette slices
Fresh cilantro or basil sprigs (optional), rinsed
-Tomato Tapenade
Directions
Step #1 Line a wide-mouth, 2- to 3-c noncorrosive container with two smooth layers of cheesecloth or a clean, dry muslin or linen towel.
Step #2 Press a fourth of the Yogurt Cheese evenly over bottom of container.
Step #3 Spread a third of the pesto evenly over cheese to edges of container.
Step #4 Repeat steps to layer remaining cheese & pesto, ending with cheese.
Step #5 Fold edges of cloth over cheese & press carefully to compact.
Step #6 Cover up airtight & chill until firm, at least 1 hr or up to 1 day; every once in awhile uncover & tilt container to pour off any accumulated liquid.
Step #7 Fold back cloth; invert a plate over torta & then, holding plate & container together, invert torta onto plate.
