Salt-roasted Shrimp With Lemon-honey Dipping Sauce Recipe

Ingredients
  • 1 (4-lb) box rock salt
  • 2 tbsps minced green onions
  • 2 tsps grated lemon rind
  • 2 tbsps honey
  • 1/8 tsp ground red pepper
  • 1 tsp low-sodium soy sauce
  • 1/3 c fresh lemon juice (about 4 lemons)
  • 1 garlic clove, minced
  • 24 unpeeled jumbo shrimp (about 1 1/2 lbs)

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Pour salt in an even layer in a shallow roasting pan or large cast-iron skillet.
  • Step #3 Place pan in oven at 400° for 30 mins or until salt is very hot.
  • Step #4 Arrange shrimp in a single layer over salt.
  • Step #5 Cover up with foil wrap; bake this at 400° for 5 mins or until shrimp are done.
  • Step #6 Combine the rind & remaining ingredients; serve sauce with shrimp.
