Olive-goat Cheese Bruschetta Recipe

Ingredients
  • 2 tbsps sliced fresh basil
  • 1/8 tsp freshly ground black pepper
  • 1 garlic clove, peeled
  • 1/4 c sliced pitted olives
  • 1/8 tsp salt
  • 16 (1/4-inch-thick) slices French bread baguette (about 4 oz)
  • 1 tsp sherry vinegar
  • 1 c sliced seeded plum tomato
  • 1/4 c mild goat cheese, at about room temp

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Combine first 6 ingredients in a small bowl, & set aside.
  • Step #3 Arrange bread on a baking sheet; bake this at 400° for 8 mins or until lightly browned & crisp.
  • Step #4 Remove toast slices from oven, & cool 2 mins.
  • Step #5 Rub both sides of each toast slice with garlic clove.
  • Step #6 Spread goat cheese thinly on 1 side of each toast, & top this with the olive mixture.
