Herbed Ricotta And Tomato Bruschetta Recipe

Ingredients
  • 2 tsps finely sliced fresh mint
  • 1 garlic clove, halved
  • 1 tsp finely sliced fresh tarragon
  • 1 1/2 tsps extravirgin olive oil
  • 8 (1-oz) slices country-style bread
  • 1/4 tsp freshly ground black pepper
  • 1/4 c whole milk ricotta cheese
  • 2 tsps finely sliced fresh chives
  • 4 tsps finely sliced fresh flat-leaf parsley, divided
  • 1/8 tsp salt
  • 1 large ripe tomato, cut into 8 (1/4-inch-thick) slices (about 8 oz)
  • 1 tsp fresh lemon juice

Directions
  • Step #1 Prepare grill.
  • Step #2 Combine first 6 ingredients; stir in the 1 tbsp parsley.
  • Step #3 Place bread slices on grill rack; grill 1 min on each side or until lightly browned.
  • Step #4 Rub one side of each bread slice with cut sides of garlic.
  • Step #5 Discard garlic.
  • Step #6 Brush oil evenly over garlic-rubbed sides of bread slices.
  • Step #7 Spread 1 1/2 tsps ricotta mixture over each bread slice; top each serving with 1 tomato slice.
  • Step #8 Sprinkle top salt & remaining 1 tsp parsley evenly over the tomatoes.
  • Step #9 Serve as soon as possible.
