Corn, Tomato, And Avocado Salsa Recipe

Ingredients
  • 3/4 tsp freshly ground black pepper
  • 2 large tomatoes, seeded & sliced
  • 1/3 c balsamic vinegar
  • 2 avocados, sliced
  • 1/2 c olive oil
  • 1 tsp salt
  • 8 ears fresh corn

Directions
  • Step #1 Shuck corn & cut kernels from cob.
  • Step #2 Cook kernels in boiling salted water 7 to 10 mins or until tender.
  • Step #3 Drain & cool.
  • Step #4 Combine corn, & remaining ingredients in a bowl, tomatoes, stirring until mixed.
  • Step #5 Note: Serve leftover salsa with tortilla chips, or with grilled chicken in a flour tortilla for a flavorful wrap.
