• 3 tbsps red currant jam or preserves
• 1/4 tsp kosher salt
• 8 tbsps (1 stick) unsalted butter, at about room temp

• Step #1 Place the butter in a small bowl.
• Step #2 Add the jam & salt & mash with a wooden spoon until mixd.
• Step #3 Chill the butter until needed, but allow it to come to about room temp before spreading.
