Mediterranean Bread Bowl With Hummus Recipe

Ingredients
  • 2 tbsps plain yogurt
  • 1/4 c crumbled feta cheese
  • 1 clove garlic, peeled & minced
  •  Salt
  • 1 c drained canned peeled red peppers, cut into strips
  • 1 tbsp olive oil
  • 1/4 tsp cayenne
  • 1 tbsp lemon juice
  • 1 1/2 c hummus (see notes)
  • 1/4 tsp dried ground turmeric
  • 1/3 c coarsely sliced pitted calamata olives
  • 1 round loaf (1 lb.) rye or pumpernickel bread

Directions
  • Step #1 In a bowl, olive oil, yogurt, olives, turmeric, garlic, lemon juice, mix peppers, & cayenne to coat; add salt to taste.
  • Step #2 Cover up & chill at least 1 hr & up to 1 day (see notes).
  • Step #3 With a serrated knife, slice about 1 inch off top of loaf.
  • Step #4 With the knife, hollow out center of loaf, leaving a shell about 1 inch thick.
  • Step #5 Cut top slice & bread from middle into chunks.
  • Step #6 Spread hummus in bottom of bread bowl.
  • Step #7 Top with pepper mixture & feta.
  • Step #8 Set on a platter & surround with reserved bread chunks for dipping.
