Green Olive And Walnut Crostini Recipe

Ingredients
  • 3/4 c soft goat cheese (6 oz)
  • 2 anchovy fillets, finely sliced
  • 1/2 c walnut pieces (2 oz)
  • 1/4 lb Picholine or other green olives, pitted & finely sliced (1/2 c)
  • 1 garlic clove, minced
  • 3 tbsps extra-virgin olive oil
  • 1/2 baguette, sliced 1/2 inch thick & toasted

Directions
  • Step #1 Preheat the oven to 350°.
  • Step #2 Spread the walnuts in a pie plate & bake for about 10 mins, or until lightly browned.
  • Step #3 Let cool, then finely chop.
  • Step #4 In a medium bowl, olive oil, walnuts, mix the olives, anchovies & garlic.
  • Step #5 Spread each slice of toasted baguette with 2 tsps of the goat cheese & top this with 1 tbsp of the olive mixture.
  • Step #6 Arrange the crostini on a platter & serve.
