Asparagus-and-spinach Toast With Fontina Cheese Recipe

Ingredients
  • 1 tbsp thinly sliced fresh basil
  • 1 c (1/4-inch) diagonally sliced green onions
  • 4 c sliced spinach
  • 1/4 tsp black pepper
  • 2/3 c water
  • 4 (1 1/2-oz) slices wheat bread, toasted
  • 1 lb asparagus spears
  • 2 tsps butter or stick margarine
  • 1/8 tsp salt
  • 1/4 c (1 oz) shredded fontina or mozzarella cheese

Directions
  • Step #1 Snap off tough ends of asparagus.
  • Step #2 Melt butter In a large-ish nonstick skillet over medium-high heat.
  • Step #3 Add onions; sauté 1 min.
  • Step #4 Add asparagus, water, & salt; bring to a boil.
  • Step #5 Reduce heat, & let simmer 5 mins.
  • Step #6 Add spinach; simmer 3 mins.
  • Step #7 Stir in basil & pepper.
  • Step #8 Sprinkle top 1 tbsp cheese over each toast slice; cut each slice diagonally in half.
  • Step #9 Place 4 toast halves on each of 2 plates.
  • Step #10 Spoon 1 c asparagus mixture over each serving.
