Smoked Salmon Canapés Recipe

Ingredients
  • 1/4 tsp salt
  • 1 small purple onion, minced
  • 1 tbsp honey
  • 2 medium cucumbers
  • 1/2 (8-oz) package cream cheese, softened
  •  Garnish: fresh dill sprigs
  • 1/2 tsp freshly ground pepper
  • 1/4 c sour cream
  • 1 (4-oz) package rye or pumpernickel bread slices
  • 2 (4-oz) package thinly sliced smoked salmon
  •  Freshly ground pepper

Directions
  • Step #1 Combine first 5 ingredients in a bowl; beat at lowish speed with an electric mixer until smooth.
  • Step #2 Cut each bread slice in half diagonally.
  • Step #3 Separate salmon slices & cut into 34 strips.
  • Step #4 Spread 1/2 tsp cream cheese mixture onto each bread triangle.
  • Step #5 Using a vegetable peeler, cut cucumbers into 34 thin slices.
  • Step #6 Roll a cucumber slice inside each piece of salmon; place over cream cheese spread on bread triangles.
  • Step #7 Dollop 1/2 tsp cream cheese mixture over salmon.
  • Step #8 Sprinkle top with onion & pepper; garnish, if desired.
