Prosciutto-wrapped Asparagus Recipe

Ingredients
  • 16 asparagus spears
  • 1 egg, hard-boiled, peeled, & finely sliced
  • 2 tsps fresh lemon juice
  • 1/4 tsp finely grated fresh lemon zest
  • 1/4 c sour cream
  • 1 tbsp sliced fresh flat-leaf parsley
  • 1/8 tsp freshly ground black pepper
  • 1/4 tsp salt, plus more to taste
  • 1/2 tsp Dijon mustard
  • 4 slices prosciutto

Directions
  • Step #1 Snap woody ends off asparagus spears.
  • Step #2 In a large frying pan, bring 3/4 c water to boil.
  • Step #3 Add salt & trimmed asparagus, & cook this until asparagus is tender, cover, about 4 mins.
  • Step #4 Drain, dry, & let cool.
  • Step #5 In a small bowl, sliced egg, lemon zest, lemon juice, parsley, mustard, mix sour cream, & pepper.
  • Step #6 Add salt to taste.
  • Step #7 Lay 4 asparagus spears on each piece of prosciutto & roll up.
  • Step #8 Repeat to form 4 bundles.
  • Step #9 Serve with sauce.
