Sesame-crusted Scallops With Asian Vinaigrette Recipe

Ingredients
  •  Leaf lettuce
  • 1 1/4 lbs sea scallops
  • 1/4 tsp freshly ground pepper
  •  Asian Vinaigrette
  • 1/4 tsp salt
  • 2 tbsps peanut oil, divided
  • 3 green onions, sliced
  • 1 medium-size red bell pepper, cut into thin strips
  •  Garnish: whole green onions
  • 1/3 c sesame seeds

Directions
  • Step #1 Rinse scallops & pat dry; sprinkle with salt & pepper, & dredge in sesame seeds.
  • Step #2 Heat 1 tbsp oil In a large-ish skillet over medium-high heat; add half of scallops, & cook 3 mins on each side or until done.
  • Step #3 Repeat procedure with remaining scallops & oil.
  • Step #4 Arrange red pepper strips & scallops over lettuce.
  • Step #5 Sprinkle top with sliced green onions; cross two whole green onions over each salad, if desired.
  • Step #6 Serve with Asian Vinaigrette.
