Chicken Katsu Recipe

Ingredients
  • 1 egg, beaten
  • salt & pepper to taste
  • 1 c oil for frying, or as needed
  • 1 c panko bread crumbs
  • 4 skinless, boneless chicken breast halves - lbed to 1/2 inch thickness
  • 2 tbsps all-purpose flour

Directions
  • Step #1 Spice up the chicken breasts on both sides with salt & pepper.
  • Step #2 Place the flour, egg & panko crumbs into separate shallow dishes.
  • Step #3 Coat the chicken breasts in flour, shaking off any excess.
  • Step #4 Dip them into the egg, & then press into the panko crumbs until well coated on both sides.
  • Step #5 Heat 1/4 inch of oil in a large skillet over medium-high heat.
  • Step #6 Place chicken in the hot oil, & cook 3 or 4 mins per side, or until golden brown.
