Summer Rolls With Thai Dipping Sauce Recipe

Ingredients
  • 2 c bean sprouts
  • 1/4 c rice wine vinegar
  • 1 tsp dried crushed red pepper
  • 1 c minced fresh cilantro
  • 18 rice paper wrappers
  • 2 1/2 c shredded carrot
  •  Thai Dipping Sauce
  • 3 tbsps minced fresh ginger
  • 2 tbsps lite soy sauce
  • 1/2 lb cabbage, shredded
  • 2 tbsps sesame oil
  • 1 1/2 tsps Chinese five spice
  • 1/4 c sliced green onions

Directions
  • Step #1 Combine first 11 ingredients.
  • Step #2 Cover up & chill at least 8 hrs.
  • Step #3 Drain.
  • Step #4 Place a rice paper wrapper in warm water for 30 to 45 seconds or until softened; place on a flat surface.
  • Step #5 Spoon 1/4 c vegetable mixture below center of wrapper.
  • Step #6 Fold bottom corner over filling; fold in both sides, & roll up.
  • Step #7 Place, seam side down, on a serving plate; cover with a damp towel.
  • Step #8 Repeat procedure with remaining wrappers & filling.
  • Step #9 Cut rolls in half; serve this with Thai Dipping Sauce.
  • Step #10 Note: Rice paper wrappers & fish sauce are available in large supermarkets & Asian grocery stores.
