Ingredients
4 garlic cloves, minced
3 dozen medium shrimp, shelled & deveined
Salt & freshly ground pepper
1 large shallot, minced
1 1/2 tbsps Dijon mustard
5 c fresh white bread crumbs (7 oz)
1/2 c dry white wine
2 bay leaves
1 1/2 tbsps sliced thyme
7 tbsps unsalted butter
3 dozen medium littleneck clams, shucked, on the half shell, empty shells reserved
3 dozen medium mussels (1 1/2 lbs), scrubbed & debearded
Directions
Step #1 Preheat the oven to 500°.
Step #2 Melt the butter in a medium skillet.
Step #3 Add the garlic & shallot & cook over low heat/flame until softened, 5 mins.
Step #4 Transfer to a bowl & let cool.
Step #5 Stir in the mustard.
Step #6 Add the bread crumbs & thyme, season this with salt & pepper & toss well.
Step #7 In a medium saucepan, bring the wine to a boil with the bay leaves.
Step #8 Add the mussels, cover & cook over high heat until they open, 1 to 2 mins.
Step #9 Transfer to a bowl; strain the cooking liquid into a c & add a pinch of salt.
Step #10 Set the mussels on the half shell on a baking sheet; discard the empty mussel shells.
Step #11 Set the clams on the half shell on a baking sheet.
Step #12 Put a shrimp in each of the empty clam shells & arrange on a baking sheet.
Step #13 Spoon ð tsp of the mussel liquid over each mussel, clam & shrimp to moisten them.
Step #14 Mound 2 tsps of the bread crumbs on the seafood in each shell.
Step #15 Position 2 sheets of shellfish on a rack in the upper third of the oven & bake for 5 mins, or until browned.
Step #16 Repeat with the third sheet.
Step #17 Serve.
Step #18 Variation Spread the steamed mussels & raw clams & shrimp In a large-ish gratin dish.
Step #19 Sprinkle top with the seasoned bread crumbs & bake this at 500° until browned.
Step #20 Toss with cooked linguine, olive oil & some of the mussel liquid.
