Ingredients
1 tsp chili powder
1/8 tsp salt
1/2 tsp ground cumin
1 (12.3-oz) package reduced-fat firm tofu, drained & crumbled
2 c baby spinach leaves
1 tsp vegetable oil
1 c bottled salsa
1/4 c (1 oz) shredded reduced-fat cheddar cheese
4 (8-inch) flour tortillas
2 tbsps minced fresh cilantro
Directions
Step #1 Heat oil in a medium nonstick skillet over medium-high heat.
Step #2 Add chili powder & cumin; cook 10 seconds.
Step #3 Add tofu; cook 1 1/2 mins, stirring frequently.
Step #4 Stir in cheese, cilantro, & salt.
Step #5 Remove from heat.
Step #6 Warm tortillas according to package directions.
Step #7 Arrange 1/2 c spinach over each tortilla; top each with 1/4 c tofu mixture.
Step #8 Roll up.
Step #9 Serve with salsa.
