Tofu Breakfast Burritos Recipe

Ingredients
  • 1 tsp chili powder
  • 1/8 tsp salt
  • 1/2 tsp ground cumin
  • 1 (12.3-oz) package reduced-fat firm tofu, drained & crumbled
  • 2 c baby spinach leaves
  • 1 tsp vegetable oil
  • 1 c bottled salsa
  • 1/4 c (1 oz) shredded reduced-fat cheddar cheese
  • 4 (8-inch) flour tortillas
  • 2 tbsps minced fresh cilantro

Directions
  • Step #1 Heat oil in a medium nonstick skillet over medium-high heat.
  • Step #2 Add chili powder & cumin; cook 10 seconds.
  • Step #3 Add tofu; cook 1 1/2 mins, stirring frequently.
  • Step #4 Stir in cheese, cilantro, & salt.
  • Step #5 Remove from heat.
  • Step #6 Warm tortillas according to package directions.
  • Step #7 Arrange 1/2 c spinach over each tortilla; top each with 1/4 c tofu mixture.
  • Step #8 Roll up.
  • Step #9 Serve with salsa.
