Italian Brunch Casserole Recipe

Ingredients
  • 6 large eggs
  • 2 c (8 oz) shredded sharp Cheddar cheese
  • 1/2 tsp pepper
  • 8 green onions, sliced (1 c)
  • 1 (16-oz) Italian bread loaf, cut into 1-inch cubes (about 8 c)
  • 1 tsp salt
  • 1 (8-oz) package sweet Italian sausage
  • 2 zucchini, sliced (about 3 c)
  • 1 (7-oz) jar roasted red bell peppers, drained & sliced
  • 1 1/2 c milk

Directions
  • Step #1 Remove & discard casings from sausage.
  • Step #2 Cook sausage In a large-ish skillet, stirring until sausage crumbles & is no longer pink; drain.
  • Step #3 Add green onions & next 3 ingredients to skillet.
  • Step #4 Sauté 4 mins or until vegetables are tender.
  • Step #5 Stir in roasted bell peppers.
  • Step #6 Drain & cool.
  • Step #7 Spread 4 c of bread cubes in a lightly greased 13- x 9-inch baking dish.
  • Step #8 Top with half each of the sausage mixture & cheese.
  • Step #9 Repeat with remaining bread, sausage, & cheese.
  • Step #10 Whisk together eggs & milk.
  • Step #11 Pour egg mixture over bread.
  • Step #12 Cover up & chill 8 hrs.
  • Step #13 Bake, covered, at 325° for 1 hr or until bubbly & hot.
