Sausage-and-cheese Muffins Recipe

Ingredients
  • 1 1/2 c all-purpose baking mix
  • 1 large egg
  •  Poppy seeds (optional)
  • 2 c (8-oz) shredded Cheddar cheese, divided
  • 3 tbsps butter or margarine
  • 1 medium-size sweet onion, finely sliced
  • 1 c hot or mild ground pork sausage, cooked & crumbled
  • 1/2 c milk

Directions
  • Step #1 Melt butter in a skillet over medium-high heat; add onion, & sauté 3 to 5 mins or until tender.
  • Step #2 Combine baking mix & half of cheese In a large-ish bowl; make a well in center of mixture.
  • Step #3 Stir together milk & egg, mixing well; add to cheese mixture, stirring until moistened.
  • Step #4 Stir in onion & sausage.
  • Step #5 Spoon into lightly greased muffin pans, filling two-thirds full.
  • Step #6 Sprinkle top with remaining 1 c cheese, Sprinkle top with poppy seeds, if desired.
  • Step #7 Bake at 425º for 18 mins or until golden.
  • Step #8 Let stand 2 to 3 mins before removing from pans.
  • Step #9 Note: Substitute mini muffin pans for regular pans, if desired.
  • Step #10 Bake at 425º for 14 mins or until golden.
  • Step #11 Makes 2 1/2 dozen mini muffins.
