Shrimp And Artichoke Strata Recipe

Ingredients
  • 1 (8-oz) package cream cheese, cubed
  • 1 red bell pepper, sliced
  • 1/4 tsp freshly ground black pepper
  • 1 tbsp olive oil
  • 1 c (4 oz) shredded Cheddar cheese
  • 1/4 c sliced fresh parsley
  • 1 small onion, sliced
  • 1/3 c milk
  • 6 large eggs, lightly beaten
  • 1 1/2 c soft bread cubes
  • 1/2 tsp salt
  • 1 (14-oz) can artichoke hearts, coarsely sliced
  • 1 garlic clove, minced
  • 1/2 lb peeled & deveined cooked shrimp, coarsely sliced

Directions
  • Step #1 Heat oil In a large-ish nonstick skillet over medium-high heat.
  • Step #2 Add garlic & next 3 ingredients; cook 3 mins or until vegetables are tender.
  • Step #3 Combine eggs & next 3 ingredients In a large-ish bowl.
  • Step #4 Stir in vegetable mixture, shrimp, & next 3 ingredients.
  • Step #5 Pour mixture into a greased 11- x 7-inch baking dish.
  • Step #6 Bake at 350º for 45 mins or until golden brown.
  • Step #7 Let stand 5 mins.
  • Step #8 Sprinkle top with parsley.
