Sweet Potato Biscuits Recipe

Ingredients
  • 5 tbsps chilled unsalted butter, cut into small pieces
  • 1 c pureed cooked sweet potatoes, cooled
  • 1/2 tsp salt
  • 2 tsps baking powder
  • 1/3 c fat-free milk
  •  Cooking spray
  • 1 tbsp sugar
  • 2 c all-purpose flour (about 9 oz)

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Lightly spoon flour into dry measuring c; level with a knife.
  • Step #3 Combine flour, baking powder, sugar, & salt in a bowl.
  • Step #4 Cut in butter with a pastry mixer or 2 knives until mixture resembles coarse meal.
  • Step #5 Combine sweet potato & milk in a small bowl; add potato mixture to flour mixture, stirring just until moist.
  • Step #6 Turn dough out onto a lightly floured surface; knead lightly 5 times.
  • Step #7 Roll dough to a 3/4-inch thickness; cut with a 2-inch biscuit cutter into 10 biscuits.
  • Step #8 Place biscuits on a baking sheet coated with cooking spray.
  • Step #9 Gather remaining dough.
  • Step #10 Roll to a 3/4-inch thickness.
  • Step #11 Cut with a 2-inch biscuit cutter into 6 biscuits.
  • Step #12 Place the biscuits on prepared baking sheet.
  • Step #13 Discard any remaining scraps.
  • Step #14 Bake at 400° for 15 mins or until lightly browned.
  • Step #15 Remove from pan; cool 5 mins on wire racks.
  • Step #16 Serve warm or at about room temp.
