Breakfast Coffee Cake Recipe

Ingredients
  • 1/2 tsp baking powder
  • 1 1/2 c powdered sugar, sifted
  • 2 tsps instant espresso granules
  • 1/2 c butter, softened
  • 1 1/2 c granulated sugar, divided
  • 1 tsp baking soda
  • 1 c vanilla fat-free yogurt (about 8 oz)
  • 1/2 tsp salt
  • 1 3/4 c all-purpose flour (about 7 3/4 oz)
  •  Cooking spray
  • 1/2 c egg substitute
  • 1/2 c nutlike cereal nuggets (such as Grape-Nuts)
  • 2 tbsps cooled brewed coffee
  • 1 tsp ground cinnamon

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Combine 1/2 c granulated sugar, cereal, espresso granules, & cinnamon in a small bowl; stir with a whisk.
  • Step #3 Set aside.
  • Step #4 Lightly spoon flour into dry measuring c; level with a knife.
  • Step #5 Combine flour, baking soda, remaining 1 c granulated sugar, baking powder, & salt In a large-ish bowl.
  • Step #6 Add yogurt, butter, & egg substitute; beat with an electric mixer on lowish speed 1 min or until mixd.
  • Step #7 Spread half of batter into an 8-inch square baking dish coated with cooking spray.
  • Step #8 Sprinkle top with cereal mixture; top this with remaining half of batter.
  • Step #9 Bake at 350° for 45 mins or until a wooden pick inserted in center comes out clean; cool in pan.
  • Step #10 Combine powdered sugar & coffee in a small bowl; spread glaze evenly over top of cake.
  • Step #11 Cut into 12 pieces.
