Spring Hash With Eggs Sunny-side Up Recipe

Ingredients
  • 1 medium zucchini, unpeeled & grated
  • 4 large eggs, cooked sunny-side up
  • 2 tbsps olive oil
  • 1/4 tsp black pepper
  • 2 russet potatoes, peeled & grated
  • 3 1/2 tbsps finely sliced fresh dill
  • 1 tsp kosher salt

Directions
  • Step #1 In a large strainer placed in the sink or over a plate, mix the potatoes & zucchini.
  • Step #2 With your hands, squeeze to remove any excess water.
  • Step #3 Add 3 tbsps of the dill & toss.
  • Step #4 Heat the oil In a large-ish cast-iron skillet over medium-low heat.
  • Step #5 Add the potato-and-zucchini mixture, pressing it with the back of a spatula.
  • Step #6 Spice up with the salt & pepper.
  • Step #7 Cook, without stirring, for 15 mins.
  • Step #8 Fold the hash in half.
  • Step #9 Cook for a few more mins.
  • Step #10 Transfer to individual plates along with the eggs.
  • Step #11 Sprinkle top both the hash & eggs with the remaining dill.
