Herbed Parmesan Soufflé Recipe

Ingredients
  • 1 tbsp sliced fresh parsley
  • 3/4 c (3 oz) grated fresh Parmesan cheese
  • 1/2 tsp salt
  • 1 large egg yolk, lightly beaten
  • 2 tbsps potato starch
  • 1 tbsp sliced fresh or 1 tsp dried thyme
  • 1/8 tsp ground nutmeg
  • 1/3 c dry breadcrumbs
  • 1/8 tsp ground red pepper
  • 1/8 tsp cream of tartar
  •  Cooking spray
  • 6 large egg whites
  • 1 c fat-free milk

Directions
  • Step #1 Preheat oven to 350º.
  • Step #2 Coat a 1 1/2-quart soufflé dish with cooking spray; sprinkle with 1/3 c dry breadcrumbs.
  • Step #3 Combine potato starch, salt, & nutmeg in a medium saucepan, & slowly add 1 c milk, pepper, stirring with a whisk.
  • Step #4 Bring to a boil over med-heat/flame, stirring constantly with a whisk.
  • Step #5 Cook 1 min or until thick, stirring constantly (mixture will be thick).
  • Step #6 Remove from heat; stir in the cheese, thyme, & parsley.
  • Step #7 Spoon mixture into a large bowl, & let this stand 1 min.
  • Step #8 Whisk in egg yolk.
  • Step #9 Place egg whites & cream of tartar In a large-ish bowl; beat with a mixer at high speed until stiff peaks form.
  • Step #10 Gently stir one-fourth of egg whites into cheese mixture; carefully fold in remaining egg whites.
  • Step #11 Gently spoon mixture into prepared dish.
  • Step #12 Bake at 350º for 35 mins or until puffed & golden.
  • Step #13 Serve as soon as possible.
