Banana Pancakes Recipe

Ingredients
  • 1 1/4 c low-fat buttermilk
  •  Cinnamon-Rum Syrup
  • 1/4 tsp salt
  • 1 tbsp vegetable oil
  • 1 c all-purpose flour
  • 1 egg
  • 1 tsp baking powder
  • 1 1/2 c sliced ripe banana
  • 3 tbsps sliced pecans, toasted
  • 1 tbsp sugar
  • 1/2 tsp vanilla extract
  • 1/2 tsp baking soda

Directions
  • Step #1 Combine first 5 ingredients In a large-ish bowl; stir well.
  • Step #2 Combine buttermilk, vanilla, oil, & egg in a small bowl; stir well.
  • Step #3 Add to flour mixture, stirring until smooth.
  • Step #4 Fold in banana.
  • Step #5 Spoon about 1/3 c batter for each pancake onto a hot nonstick griddle or nonstick skillet.
  • Step #6 Turn pancakes when tops are covered with bubbles & edges look cooked.
  • Step #7 Serve with Cinnamon-Rum Syrup, & sprinkle with pecans.
