Sesame-cheese Muffins Recipe

Ingredients
  • 1 small sweet onion, finely sliced
  • 1/2 c milk
  • 1 1/2 c all-purpose baking mix
  • 2 tbsps butter, melted
  • 1 large egg
  • 1 c (4 oz) shredded sharp Cheddar cheese*, divided
  • 1 tbsp butter
  • 1 tsp sesame seeds, toasted

Directions
  • Step #1 Melt 1 tbsp butter in a small skillet over medium-high heat.
  • Step #2 Add onion, & saute 2 mins or until tender; set aside.
  • Step #3 Combine baking mix & half of cheese In a large-ish bowl; make a well in center of mixture.
  • Step #4 Stir together onion, & milk, mixing well; add to cheese mixture, egg, stirring just until dry ingredients are moistened.
  • Step #5 Spoon into lightly greased muffin pans, filling two-thirds full.
  • Step #6 Sprinkle top evenly with remaining cheese & sesame seeds; drizzle with butter.
  • Step #7 Bake at 400° for 15 to 20 mins or until golden.
  • Step #8 NOTE: Substitute mini muffin pans for regular pans, if desired.
  • Step #9 Bake at 400° for 12 to 14 mins or until golden.
  • Step #10 Makes 1 1/2 dozen mini muffins*1 c (4 oz) shredded Monterey Jack cheese with peppers may be substituted for Cheddar cheese.
