Make-ahead Breakfast Casserole Recipe

Ingredients
  • 1 c (4 oz) reduced-fat shredded sharp cheddar cheese
  • 1 1/4 c fat-free milk
  • 1/2 c sliced green onions
  • 1 (8-oz) carton egg substitute
  • 1 lb turkey breakfast sausage
  • 8 oz ciabatta bread, cut into 1-inch cubes
  • 2 large eggs
  •  Cooking spray
  • 2 tbsps sliced fresh parsley

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Arrange bread cubes in a single layer on a baking sheet.
  • Step #3 Bake at 400° for 8 mins or until toasted.
  • Step #4 Heat a medium skillet over medium-high heat.
  • Step #5 Coat pan with cooking spray.
  • Step #6 Add sausage to pan; cook 6 mins or until browned, stirring to crumble.
  • Step #7 Combine sausage, bread, & onions In a large-ish bowl.
  • Step #8 Combine milk, eggs, & egg substitute in a medium bowl, cheese, stirring with a whisk.
  • Step #9 Add milk mixture to bread mixture, tossing to coat bread.
  • Step #10 Spoon mixture into a 2-quart baking dish coated with cooking spray.
  • Step #11 Cover up & put in the fridge 8 hrs or overnight.
  • Step #12 Preheat oven to 350°.
  • Step #13 Uncover casserole.
  • Step #14 Bake at 350° for 50 mins or until set & lightly browned.
  • Step #15 Sprinkle top with parsley; serve as soon as possible.
